Wagyu Tallow has the highest smoke point of any oils and fats. The smoke point is the temperature that fats and oils break down to form free radicals. With Wagyu Tallow you are assured of a stable tallow at the highest cooking temperatures, for the best health outcomes.
As a side note, if you get your Wagyu Tallow and it arrives soft or liquid due to warmer temperatures this is normal, Wagyu Tallow has a lower melting point than other tallows. If you prefer your tallow to be spreadable simply store under refrigeration.
HOW IT‘S MADE
NXGEN Wagyu Tallow is made by slow melting Premium Australian Grass Fed Wagyu Fat at low temperatures for 8 hours to remove impurities while retaining valuable free fatty acids and heat sensitive fat soluble vitamins. Once completely melted into tallow the impurities are removed by double filtering for increase purity, white tallow colour and flavour. There is nothing added, 100% natural tallow.
HEALTH BENEFITS OF SATURATED ANIMAL FATS
Many modern day Doctors are proponents of saturated animal fats, strongly disputing the literature of Keys, who had a large influence on changing consumer behaviour from animal fats to plant oils. With new science, there is now a re-education program enlightening consumers of the benefits of saturated animal fats and the need to return to animal fats like beef tallow for nutrition, health and well being. The science is now suggesting that there is good cholesterol found in tallow and animal fats. Why return to saturated animal fats? - because saturated fats are found in every cell and what's more the brain is made up of 30% saturated fats and needs fat for cognitive health, and brain development. Bones are made up of marrow, which is essential and high in saturated fats. 1) Stronger Bones
According to one of the foremost research experts in dietary fats and human health, Mary Enig, Ph.D., there is a case to be made for having as much as 50 percent of the fats in your diet as saturated fats for contributing to stronger bones. That is a far cry from the 10 percent suggested by mainstream institutions. If such reasoning is true is it any wonder that the vast majority of women told to avoid saturated fat would begin to lose bone mass, develop osteoporosis, and get put on expensive prescription medications plus calcium to try to recover the bone density loss occurring in their middle age?
2) Improved Cardiovascular Risk Factors
The addition of saturated fat to the diet reduces the levels of a substance called lipoprotein (a)—pronounced “lipoprotein little a” and abbreviated Lp(a)—that correlates strongly with risk for heart disease. Currently there are no medications to lower this substance and the only dietary means of lowering Lp(a) is eating saturated fat. Moreover, eating saturated (and other) fats also raises the level of HDL, the so-called good cholesterol. Lastly, research has shown that when women diet, those eating the greatest percentage of the total fat in their diets as saturated fat lose the most weight.
3) Strong Immune System
Saturated fats found in tallow (myristic acid and lauric acid) play key roles in immune health. Loss of sufficient saturated fatty acids in the white blood cells hampers their ability to recognise and destroy foreign invaders, such as viruses, bacteria, and fungi. Human breast milk is quite rich in myristic and lauric acid, which have potent germ-killing ability. But the importance of the fats lives on beyond infancy; we need dietary replenishment of them throughout adulthood, middle age, and into seniority to keep the immune system vigilant against the development of cancerous cells as well as infectious invaders.
4) Proper Nerve Signalling
Certain saturated fats, particularly those found in tallow function directly as signalling messengers that influence the metabolism, including such critical jobs as the appropriate release of insulin. For proper function, the airspaces of the lungs have to be coated with a thin layer of what’s called lung surfactant. The fat content of lung surfactant is 100 percent saturated fatty acids. Replacement of these critical fats by other types of fat makes faulty surfactant and potentially causes breathing difficulties. Absence of the correct amount and composition of this material leads to collapse of the airspaces and respiratory distress. It’s what is missing in the lungs of premature infants who develop the breathing disorder called infant respiratory distress syndrome.
7) Healthy Liver
Adding saturated fat to the diet has been shown in medical research to encourage the liver cells to dump their fat content. Clearing fat from the liver is the critical first step to calling a halt to middle-body fat storage. Additionally, saturated fat has been shown to protect the liver from the toxic insults of alcohol and medications, including acetaminophen and other drugs commonly used for pain and arthritis, such as nonsteroidal anti-inflammatory drugs or NSAIDs, and even to reverse the damage once it has occurred. Since the liver is the lynchpin of a healthy metabolism, anything that is good for the liver is good for getting rid of fat in the middle.

No, our tallow is 100% natural and has no odour.
Is your tallow hydrogenated ?
No, we do not add hydrogen to saturate the free fatty acid bonds to make it solidify. Our tallow is 100% pure and natural.
Why is Wagyu Tallow so expensive?
The cheaper Wagyu Tallows are not 100% pure Wagyu but cross breeds between Angus Cattle and Wagyu. Furthermore they are finished on grain. NXGEN Australian Grass Fed & Finished Wagyu fat is very difficult to source. As such raw material is highly sought after and expensive. Our patented low temperature rendering process removes water from the fat and has an advanced filtration system to make golden tallow rich in fat soluble vitamins.
How long does your tallow last?
Our tallow is purified and lasts 24 months, providing once open the lid is always correctly sealed and old tallow is not added back into the jar.
Should I refrigerate after opening?
No need if you have a cool pantry. Some people in locations where temperatures exceed 40C like to refrigerate to allow Wagyu tallow to firm.
My Wagyu tallow has streaks is this normal?
Yes. Wagyu tallow has many different free fatty acids. These fatty acids in Wagyu fat have very low and different melting points. The streaks are of solid tallow and liquid tallow. Refrigerate to firm for constant texture and colour.
